Spiced pork liver salad

Ingredients

1000 grams pork liver

1 piece scallion, sliced

1 piece ginger, sliced

3 star anise

1 cinnamon stick

2 tablespoons white wine

5 bay leaves

6 dried red chilies

1 teaspoon cumin

4 tablespoons soy sauce

1 teaspoon salt

1 tablespoon minced garlic

1 tablespoon vinegar

1 teaspoon sesame oil

1 tablespoon chili oil sauce

Method

1. Immerse the pork liver in water for 3 hours

 

2. Add some cold water in a stew pan, add some scallion, ginger, and white wine in the stew pan, heat the stew pan over high heat, bring to a boil

 

3. Remove the scums

 

4. Take out the pork liver, rinse, drain

 

5. Rinse the stew pan, add the scallion, ginger, cumin, star anise, bay leaves, cinnamon stick, and dried red chilies in the stew pan, add some soy sauce the white wine in the stew pan, pour some water in the stew pan

 

6. Heat the stew pan over high heat, bring to a boil, turn down to low heat, boil for 10 minutes

 

7. Add the pork liver in the stew pan, turn up to medium heat, bring to the boil

 

8. Turn down to low heat, cover the stew pan with the lid, stew for 20 minutes

 

9. Turn off the heat, immerse the pork liver in the soup for 2 hours

 

10. Take out the pork liver, slice, lay the sliced pork liver in a dish

 

11. Add the minced garlic, vinegar, soy sauce, sesame oil, and chili oil sauce in a small bowl, mix until even, top the sliced pork liver with the mixed sauce, done
